Title: Gingered Pear Honey

6lgPears; peeled & chopped
3cSugar
1 1/2tbGinger, fresh; grated
1 Lemon; thinly sliced

Cook all ingredients in heavy 3-quart saucepan over medium heat, stirring often, 5-7 minutes, until sugar dissolves. Increase heat to medium-high and cook, stirring occasionally, 40 minutes, until thickened and golden. Cool. Refrigerate in airtight containers up to 1 month.
